Minted Broad Bean & Pea Toasts

Minty, crisp, tangy, sweet - these tasty toasts are an absolute treat for lunch…

This is one of those throw together lunches that never disappoints. Rather satisfyingly, it also brings a solid 2 portions of veg into the mix in the shape of tomatoes, micro greens, broad beans and peas. It’s best served on a thick slice of freshly toasted sourdough - lathered in lashings of butter before you dive on in and add the hummus. It’s just a tastier way of doing things…

INGREDIENTS:

  • 1 thick slice of wholegrain sourdough

  • Handful of peas and broad beans (frozen if you like)

  • Handful of fresh herbs (optional)

  • 4 slow roasted tomatoes

  • 2 cloves of garlic, smashed

  • Juice of 1/3 lemon

  • 4 slow roasted tomatoes

  • Hummus

  • Handful of microgreens

METHOD:

Add some olive oil to a pan, then thrown in the broad beans and peas with the garlic, herbs (if using) and salt & pepper. Pop your toast in the toaster then return to the pan, moving the veg around until cooked (you want it to have a little bite still).

Plate up your toast, spread over the thick hummus, followed by the broad beans and peas, tomatoes and micro greens. Top with a squeeze of lemon, a drizzle of olive oil and some extra seasoning.

*It’s really easy to slow roast your own tomatoes and they taste so unbelievably good - like little (healthy!) sweets. Simply warm the oven to around 140C, slice some tomatoes in half and add to a baking sheet with some olive oil, garlic, salt, pepper and balsamic vinegar. Roast for around 90 minutes until all of those delicious sweet flavours have been released, then store in a jar in olive oil until ready to eat.
