Grilled cheese toastie with jammy blueberries & bacon

Bored of the same old salad sarnie? I hear you! It’s so easy to bogged down in life and reach for the easy/safe/obvious option. But a little thinking outside of the box (and a quick flash of something in a hot pan) can reap serious flavour dividends. And sweet and savoury absolutely CAN work - especially when there’s cheese involved…
There’s no recipe here to speak of exactly. What you see here is a hastily constructed myriad of ingredients working in harmony together to give you a sarnie that hits all the right notes. Oozy and sweet, juicy and caramelized - it’s got IT ALL going on.
INGREDIENTS:
2 generous slices of sourdough
Somerset brie (or cheese of your choice) thickly sliced
Grated parmesan
Onion chutney
Microgreens
Blueberries - crushed in a pan on the hob with a little lemon juice, zest and icing sugar
METHOD:
Heat a griddle pan with some olive oil (and a dash of lurpak). Add one slice of the bread to the pan and top with the chutney, brie and crushed blueberries. Grate over the parmesan and season slightly, leaving everything to melt in nicely over a low heat.
Throw on some microgreens and top with the other slice of bread. Add a little more butter to the pan and flip so the other side gets a nice griddle too. Leave for a further 2 minutes and then dive on in!
