Recipe:
250g plain flour
Large pinch of salt
1/2 tsp baking powder
180g caster sugar
30g light brown sugar
50g maple syrup
150g butter, cubed
1 egg, whisked
100g dark chocolate, cut into chunks
200g cranberries - sliced
100g mixed nuts - chopped
Method:1) Heat the oven to 180C and grease/line two baking sheets with parchment paper.
2) Add the flour, baking powder, salt and sugars to a bowl. Add the maple syrup and butter and work the mix with your hands until it resembles breadcrumbs.
3) Tip in the whisked egg, chocolate, cranberries and nuts and stir to combine.
4) Place spoonfuls of the cookie dough onto the baking sheets (leaving space either side for them to spread) and top with some sifted sugar. Place in the oven for 12 minutes until lightly golden. Remove to cool and enjoy!
